Poached Egg + Cocoa = Lackluster First Attempt

The cocoa was good. The egg was good, mostly. Some of the egg white got a bit overcooked since the cocoa was shallow and the bottom was hotter than the top, so some curdling occurred. I think next time, and there will be a next time, for sure, I will mix the egg yolk into the cocoa first, so just like the regular ice cream custard, except I mix everything together in one pot now. Then I will remove the pot from the stove and slow poach the egg white, so they are smoother and silkier. Curdled egg whites are not as appetizing. But I still ate it all:
