Interesting article from Harold McGee in the NYTimes about how microwaves heat food and some cooking techniques. He wrote “On Food and Cooking: The Science and Lore of the Kitchen“, which is on my to-read list. Here’s his website; he writes about the science of food and cooking. Interesting stuff.
